Dietary fiber is classified by its behaviour in water and fermentability in the colon. These two axes determine every functional property that matters for formulation: viscosity, water-binding, texture impact, gel formation, and the type of prebiotic effect in the gut. Choosing the wrong fiber type for a given application produces either undesirable texture, insufficient physiological effect, or labelling problems under EU Regulation 1169/2011.
Soluble fiber (e.g. inulin, beta-glucan, pectin) dissolves in water, forms viscous solutions or gels, is fully fermented in the proximal colon, and produces short-chain fatty acids (SCFAs) — primarily acetate, propionate and butyrate. Inulin and FOS selectively feed Bifidobacterium and Lactobacillus, making them the standard prebiotic fibers in functional food formulation. They have minimal impact on product texture at typical doses (3–8 g/serving) and do not increase viscosity significantly in beverages.
Insoluble fiber (e.g. cellulose, wheat bran) does not dissolve, is only partially fermented, and acts mechanically — increasing stool bulk and transit speed. It increases water absorption without gel formation. Psyllium husk is unique: it contains both a soluble mucilage outer layer (≥85% of the fiber fraction, forms gel in water) and an insoluble core. This dual functionality makes it a laxative, a cholesterol-lowering agent (via bile acid binding) and a viscosity modifier in formulations. Apple fiber has a similar mixed profile, with soluble pectin from apple flesh and insoluble cellulose/hemicellulose from the pomace, making it functionally suited to bakery enrichment and supplement carriers where both texture and prebiotic action are desired.

Fiber selection is application-specific. The wrong grade changes texture, viscosity, labelling claims and consumer perception. Below: correct fiber choice per production segment.
Inulin is the standard fiber for clear beverages — it is fully soluble, does not affect viscosity at ≤8 g/serving, and provides a clean prebiotic label claim. Psyllium husk is not suitable for clear beverages (gels on contact with water). Apple fiber can be used in cloudy or particulate beverages.
Psyllium husk is the primary fiber binder in gluten-free bread — its mucilage gel mimics gluten structure, providing cohesion and moisture retention. Apple fiber adds moisture, extends shelf life and contributes dietary fiber content without significantly impacting flavour. Inulin can partially replace fat in reduced-fat bakery products.
Inulin is used as a partial sugar replacer and prebiotic in functional chocolate bars. At 10–15% dosage, it contributes creaminess similar to fat. Apple fiber contributes dietary fiber to bars and energy balls without flavour impact. Psyllium husk is used in high-fiber bars for binding and moisture control.
Inulin powder is the standard prebiotic supplement ingredient — used as-is in sachets and sticks, or blended with probiotic cultures. Psyllium husk is the primary active in soluble fiber supplement products (EU health claim: 'Psyllium seed husk contributes to an increase in faecal bulk'). Apple fiber is used as a supplement carrier and filler with fiber content.
Inulin and apple fiber are used in meal replacement powders to meet the dietary fiber content requirement (minimum 3 g per meal equivalent). Fiber contributes to satiety and glycaemic control. Psyllium husk provides additional viscosity-based satiety in meal replacement shakes.
Inulin is used in plant-based yoghurt, cheese and milk analogues to add prebiotic value and improve texture — it acts as a fat replacer and provides a mild sweet note. Psyllium husk functions as a gelling agent in plant-based products where xanthan gum alone is insufficient.
EU Regulation 1169/2011 defines dietary fiber for nutrition labelling. The fiber content of each product determines both label claims and typical use dosages.
Dosage recommendations are reference values. Actual dosage depends on the formulation matrix, target fiber content per serving and consumer compliance. FODMAP sensitivity varies — consult with your regulatory team for final label claims under EU Reg. 1924/2006.
